Game day snacks – meet meal prep. You two should be friends. TWO BIRDS people. One stone. I just solved everyone’s sunday funday meal prep failure problems. Guess what? These amazing gluten-free appetizers double as weekday freezer snacks!

If you’re having friends over or going to a football watching shindig – these are perf and they’ll all get gobbled up in no time. Creamy, sausagey, gluten- free and dairy-free – they will delight your guests and they’re painless to make. BUT, the more likely scenario for me and my fellow introverts is that you’re staying in for the game but you still want to eat well. Assuming you make a full batch, that will be about 20 bites! Thats a lot of potatoes for two people. So I froze two or three each, in a separate plastic baggies. Over the next few weeks, grab a bag on your way to work or in a dinner pinch and pop them in the microwave. They heat up perfect and you have a clean ingredient, protein rich snack!

I pretty much spend my life trying to find ways to make snacks and food that feels indulgent, that are still gluten-free and dairy-free. These are a perfect example. Who needs bagel bites when you have these?? Yes, they take more time, I’ll give you that. But putting time into my food makes me feel good. Do you feel the same? I know know not everyone does, but there is something so satisfying about making something tasty, that you are proud of, and sharing it with your family and friends.

SO – make them ahead of time!

Thursday night free? Prep the bites and seal them in the fridge and heat them up in the oven on Saturday. Your gut flora and love handles will thank you later 🙂 Save your Wheat Belly for beer!

Twice Baked Pizza Potato Bites

Mini Twice Baked Potatoes with sausage and pepperoni dipped in homemade pizza sauce

For Potatoes

  • 1.5 lb Yukon gold yellow potatoes, - about 10 small ones
  • 1/2 tbsp olive oil, divided
  • 1/4 tsp salt
  • 1 lb Hot Italian sausage
  • 1/2 small onion, - diced small
  • 2 tbsp coconut cream
  • 1/4 tsp salt
  • 1/4 tsp chili flakes
  • 1/4 tsp garlic powder
  • Italian seasoning
  • 8 slices pepperoni or salami, - sliced thinly

For Pizza Sauce

  • 8 oz Can, Tomato sauce*
  • 1/4 cup tomato paste
  • 1/4 tsp chili flakes
  • 1 clove garlic, pressed
  • 1/4 tsp italian seasoning


  • Preheat oven to 400 Degrees
  • Scrub and rinse potatoes. Rub dry with a towel and drizzle with 1/4 tbsp oil. Rub each potato with the oil all and pierce with a fork.
  • Roast for 25-30mins (turn each potato over at 15mins). They should be easily pierced with a fork but not too squishy.
  • Add remaining olive oil to sauté pan and cook onions until they are soft and translucent, but not caramelized. 
  • Crumble and add sausage. Cook through.
  • Meanwhile, slice each potato in half the long way and gently scoop out the potato filling into a bowl leaving just the skin as a shell. 
    NOTE: they are kind of fragile bc the skin of a yukon isn't tough as a russet. So just don't go all the way to the skin. Leave a little potato behind as support. 
  • Mash the potato insides with a fork and add the cooked sausage and onion mixture and add coconut cream and spices. Stir to combine. Add pepperoni and gently stir once more.
  • Using a spoon place a scoop of filling back into each potato skin. Place them on the sheet pan and return to oven for another 5-8 minutes.
  • Make pizza sauce by combining all ingredients in a bowl and stirring to combine. 
  • Dunk and enjoy!!


Tomato Sauce: The can of sauce I bought had salt added. If yours does not, season to taste.
